Savory Baked Stuffed Dates
30 pitted dates
1 cup Valdeon Spanish Cheese crumbled
1 lb. bacon strips cut in half
2 cup balsamic vinegar
Stuff individual dates with 1/2 teaspoon cheese. Wrap each date with 1/2 slice of bacon securing with toothpick. Lay on baking sheet seam side down and bake for 25 minutes in preheated 375 degree oven or until bacon is browned and crisp.You may substitute almonds for cheese if desired.
Place vinegar in sauce pan and heat slowly to a low boil. Stir vinegar as it becomes thicker till reduced by half. Serve as a dipping sauce or drizzled over baked dates.
