A Fierce Sexy, Lustful Pairing! Priorat and Tango

Nothing is sexier than Tango or the big rich Spanish red Priorat!Both have a sultry style and passion that are unmatched and an assault to the senses!So sit back and listen to the sounds of the music, delight in the flavors of the wine and cook up some tapas to complete your pairing!

Made from Grenache, Carinena and a bit of Syrah in some cases this D.O.C. wine has to be at least a whopping 13.5% minimum alchol by volume. With lush, powerful flavors I have found tastes ranging from rich blackberry, brandied cherries, chocolate, leather, smoke and floral notes in some of the best examples. Try a Viticultors Del Priorat 05 from Vega Escal available online at winelibrary.com or Mas Doix Salanques 06 for a reasonable and tasty entry into the world of what is become a highly collectable style of wine.

Pair these savory bacon wrapped dates stuffed with Marcona almonds or a Spanish blue cheese for a perfect appetizer to accompany the wine and music.

Savory Baked Stuffed Dates

30 pitted dates
1 cup Valdeon Spanish Cheese crumbled
1 lb. bacon strips cut in half
2 cup balsamic vinegar

Stuff individual dates with 1/2 teaspoon cheese. Wrap each date with 1/2 slice of bacon securing with toothpick. Lay on baking sheet seam side down and bake for 25 minutes in preheated 375 degree oven or until bacon is browned and crisp.You may substitute almonds for cheese if desired.

Place vinegar in sauce pan and heat slowly to a low boil. Stir vinegar as it becomes thicker till reduced by half. Serve as a dipping sauce or drizzled over baked dates.
